Geotjeori
When it comes to kimchi, “geotjeori” (겉절이) stands out as the ultimate version. Known as “fresh” or “quick” kimchi, it’s unfermented and bursting with vibrant flavors. Unlike traditional kimchi, which takes weeks to ferment, geotjeori offers immediate enjoyment, making it perfect for gatherings and family meals.
Fresh Flavor That Pops
Geotjeori is known for its refreshing, crunchy texture. The cabbage stays crisp, coated in a bright red chili paste with garlic, ginger, and a hint of sweetness. The seasoning delivers just enough spice without overpowering the natural freshness of the cabbage, making every bite flavorful and light.
Family Memories at Kimjang
Geotjeori holds a special place in my heart because of our annual “kimjang” (김장) at my grandmother’s house. Each winter, we’d gather to make large batches of kimchi, working together to coat each cabbage leaf with spicy paste. As a treat, my grandmother would prepare geotjeori on the spot for us to enjoy. At the end of the day, we’d each go home with 2-3 batches of freshly made kimchi, which always carried the warmth of those family moments.
When and Where to Enjoy It
Geotjeori is commonly served with grilled meat dishes like “samgyeopsal” (삼겹살), offering a refreshing contrast to richer foods. While it’s best enjoyed fresh, you can find excellent versions at places like “Gwangjang Market” in Seoul or from an online shop Kurly Market which provides a variety of kimchi options.
